Pork and Cowpea Dumplings

Clean the cowpea, blanch it in boiling water until it changes color, remove it and immediately super-cold water to keep it green, control the water and chop it.

Add green onions, ginger, cooking wine, sesame oil, oyster sauce, salt, light soy sauce, dumpling filling seasonings to the meat filling and beat evenly to the best

Stir the cowpea and the whipped meat together and mix well

Add flour and water to knead into a moderately firm dough for 20 minutes

Knead the good noodles into strips and cut them into small doses. Take a small dose and roll it into a thin skin on the thick side in the middle

Put the cowpea filling in the middle of the dumpling wrapper to make dumplings

Add water to the pot and bring to a boil. Add the dumplings and cook until they float, click the water twice and remove them.
