Pork Belly and Bamboo Shoots Stewed Chicken

1. Prepare the ingredients

2. First turn the pork belly and trim the oil inside the pork belly with scissors

3. Turn back to the front again, add flour and knead continuously and rinse with running water

4. Prepare green onions and ginger

5. Pork belly in a pot under cold water, add a little ginger slices, cover on high heat, boil, pick up and rinse

6. Then stuff the shallots and sliced ginger into the pork belly

7. Chop the grass chicken and wash it, and wash the bamboo shoots with a hob block.

8. Pour water into the pot and add the pork belly and chicken nuggets

9. Then add the remaining ginger to the cover and cook

10. When it's about eight times apart, open it and add the cooking wine

11. Start skimming the froth until it boils and keep it on high fire until all is cleared

12. Cover and simmer for one hour

13. Then turn to high heat and add bamboo shoots to a boil, then turn to low heat and simmer for half an hour

14. Add goji berries and salt, turn to high heat for 5 minutes, then turn off the heat

15. Put it in a bowl and sprinkle with chopped green onion and serve

Tips:

1. There is a layer of mucous membrane on the pork belly, which must be cleaned;
2. I used live-killed fried chicken, so I didn't blanch the water. I started to skim the froth at a slight boiling point and left it until it was clear. You can also blanch it according to your preferences;
3. This soup is very delicious, no need to add any fresh seasonings.
