Pork Belly Stew with Potatoes

The static pork belly is peeled and cut into pieces, about 1.5 cm in width.

Peel potatoes and carrots and cut into pieces with a hob.

The green onion and ginger are ready.

Heat the pot without oil, add the pork belly and stir out the fat of the pork belly. This way, the pork belly is not greasy.

Add scallion and ginger, stir fry for aroma.

Add soy sauce.

Add dark soy sauce, sugar, thirteen spices, and stir well.

Add enough hot water at one time and pour an appropriate amount of cooking wine. The meat stewed in hot water is soft and waxy. After the high heat is boiled, turn to a low heat and simmer slowly.

When the pork belly is soft and rotten, add potatoes and carrots. Turn to high heat, then turn to medium heat.

Potatoes are easy to cook. When simmering until about 1/3 of the soup remains, add salt to taste.

Collect the juice over the fire, but don't let the soup dry, save some soup for soaking the rice, don't mention how delicious it is.

The finished product is delicious but not greasy, and the pork belly melts in your mouth.
Tips:
1. If the pork belly is not greasy, it is best to stir out the fat first, without adding extra oil;
2. Add enough water at one time, and the water must be heated;
3. The soup must not be dried, leave some soup for soaking rice, which is invincible and delicious;
4. The whole journey takes about 1 hour and 20 minutes.
