Pork Lotus Root Dumplings

Prepare the ingredients.

Put the dough ingredients into the cook machine and knead the dough for 10 minutes at the 2nd gear to become a delicate dough.

Sprinkle dry powder on the panel, and round the dough on the chopping board. After the kneaded dough is cut, the texture is very fine, so that when the skin is rolled, it will be thinner and will not shrink.

Wash the coriander, remove the old roots, and cut into the mince. Also cut the ginger into the mince. The green onions are also cleaned and minced from the root. I like to put a little more ginger in the dumpling filling, but I don’t like it.

Peel the lotus root, cut off both ends, and wash. Two lotus roots were used.

First cut into sections, then stand up and cut into slices, then shred, and then cut into the ends, as finely as possible.

First, mix the pork puree, chopped green onion, chopped ginger, chopped coriander, salt, oil, dark soy sauce and fresh chicken sauce, and stir well.

Then add the chopped lotus root and stir well to make the dumpling filling.

Knead the dough into even long strips on the panel, and then use a knife to cut into even-sized noodles.

Sprinkle with flour and press flat with the palm of your hand, with thin edges and thick middle. All are pressed flat.

Flatten the cut noodles and roll them into dumpling skins with thin edges and slightly thicker middles.

Take a dumpling wrapper and add a spoonful of dumpling filling.

Squeeze hard with both hands together, and the dumplings will be squeezed, fast and full.

Put all the finished dumplings together, and I feel so satisfied.

Put water in the pot and boil, add the dumplings and cook them. Let's eat them beautifully. The lotus root filling is crispy, very fresh, and the dumpling skin is thin, especially delicious.
Tips:
1. The water absorption of flour is different. Reserve a part of the amount of water first, and then add it according to the softness and hardness of the dough.
2. Adding fresh chicken sauce to dumpling stuffing makes it more delicious.
3. Boil the dumplings, open the lid and cook the filling, cover and cook the skin, keep it boiling for 3 minutes and it will be ready.
