Pork Scallion Pancakes

Pour about 100 grams of flour in a large stainless steel basin, add boiling water and stir with chopsticks to form cotton wool

Add a small amount of dry flour to the cotton-like flour and knead it by hand. After the dough has absorbed the dry powder, continue to add the dry powder to knead while the dough is still sticky. Repeat several times, when the dough becomes smooth and does not stick to your hands, close the lid and let it rest to wake up.

The fillings were prepared just in the process of waking up the noodles. Wash the green onions and mince, wash and chop the pork. Stir the pork and green onions, add light soy sauce, soy sauce, thirteen incense, monosodium glutamate, and sesame oil. If there is more filling, add a little oil.

After the dough was awake, put it on the chopping board and knead it into an oval dough, and then evenly divide it into several equal parts (if you want to eat, divide it into several parts). Take an equal portion, roll out the dough, and spread it out into pancakes. I have no experience. The dough is not round, but it does not affect the taste.

Roll the filled pancakes from one side and start rolling the pancakes. This step is very important, and the pie that is produced in this way can have layers.

Roll the pancake into a long strip and then roll it into a circle from one end to the middle. This is also the key to the layering of the pancake.

After rolling, use a rolling pin to gently squeeze it, about 10cm in diameter. This diameter also depends on the thickness of the skin. If the dough can be rolled out a bit larger, if it is thin, just press it lightly into a circle.

What I am currently trying is hot pan with cold oil, next time I will try cold pan with hot oil or put the cake first and then put the oil. It depends on your preference
