Pork Stew Noodles

Wash and cut pork belly.

Put water, a little peppercorns and cooking wine (outside the recipe) into the pot, add the pork cubes and blanch until the water boils.

Take out warm water, rinse and drain.

Soak the vermicelli and cut into sections.

Cut the green onion into sections and slice the ginger.

Put a little oil in the pot, stir-fry with rock sugar on low heat until brown-red, pour in the pork belly and stir fry quickly.

Stir-fry until the oil is colored, add the shallots, ginger slices, star anise, and cinnamon and continue to stir-fry for a fragrance. Pour the cooking wine and stir fry until the water vapor is dry.

Add hot water until the meat is covered, add the light soy sauce and dark soy sauce, cover the high heat to boil, turn to low heat and simmer for half an hour.

Remove the green onion and ginger slices from the pot, continue to cover and simmer for about 20 minutes.

When about 1/3 of the soup is left in the pot, add the vermicelli and some salt and cook for about 8 minutes.

Cook until the vermicelli softens and the soup thickens.

Tips:
You must use low heat to fry the sugar color, don't fry it, just reddish brown. The vermicelli is very absorbent, so when stewing the meat, add more water in the pot at a time. After the vermicelli is cooked, the soup is not easy to collect and is too dry.
