This stewed pig's trotters was prepared to try my new Skyrim stew pot. The seasoning inside is still according to the taste of this group. I have been sautéing the sugar color with oil and rock sugar before. I want to try to cook the sugar color with water and rock sugar. The attempt was successful. After the stew, the pork feet are fat but not greasy, and the chickpeas are very creamy. Even the red soup can be drunk. It is delicious.

Pork Trotters Stewed Chickpeas

1. Soak the trotters in clean water for 4 hours first, and then wash them with warm water after changing the water twice in the middle

2. Soak the chickpeas for more than 8 hours after washing

3. Prepare ginger slices, rock sugar and star anise

4. Add ginger slices in cold water, pour into the trotters, blanch the water, remove and wash

5. Pour in half a bowl of water and add rock sugar

6. Use medium and low heat until the sugar water in the pot bubbling

7. Add pig's trotters and stir-fry until they are all covered with sugar water. Add cooking wine

8. Add salt

9. Add soy sauce and dark soy sauce

10. Add ginger slices and star anise

11. Pour boiling water

12. Move the food to the stew pot and pour the chickpeas

13. Press and simmer for 3 hours

14. Out of the pot

Tips:

1. Soak the trotters in clean water for a longer time to remove the peculiar smell;
2. The chickpeas are soaked for a longer time and taste more cottony.
