Pot Shrimp

Wash the shrimp, remove the shrimp thread and the shrimp gun.

Add a little salt, cooking wine, starch and an egg mixture to mix well and marinate for 15 minutes.

Boil a small pot of water, cut off the old roots of the enoki mushrooms, wash them, and blanch them.

Pour a little salt into the basin and set aside.

The scallion, ginger, garlic and dried chili were changed to knives.

Add oil to the pot to heat up, and stir-fry the Xiapi County Doubanjiang to get the red oil.

Add green onion, ginger, garlic, peppercorns, dried chili segments and chili powder (I didn't add this) and stir-fry on medium to small heat.

After frying the aroma, add the shrimp and stir-fry evenly over high heat.

Add cooking wine, dark soy sauce, pepper, sugar, and salt to set the taste, and then add an appropriate amount of water. After the water boils, keep it on high heat, and turn off the heat after boiling for 1 minute.

Pour the cooked shrimp and soup into a pot with enoki mushrooms, sprinkle with diced chives and sesame seeds.

After the prawns are eaten, you can pour the soup back into the pot, add tofu or noodles and other ingredients and cook a pot of delicious.
