Potato Baked Omelette

Prepare all the ingredients, actually used 3 eggs

Peel the potatoes, wash and slice them, put them in clean water for a short time, so there is no salt in the water, wash the onions and red peppers and cut into small cubes.

Blanch the potato slices until half-cooked, remove them, and spread them in a baking tray.

Put a tablespoon of garlic and olive oil in a pan, sauté the onion on medium heat, add red pepper and stir fry for a while, put a little salt, mix well, and turn off

Beat the eggs in a large bowl, add the fried onions, mix well and set aside

Place the potato slices on a baking tray and pour half of the vegetable egg mixture

Spread the remaining potato chips and pour in the remaining vegetable egg mixture

Preheat the oven at 180 degrees, put the baking tray in the middle of the oven, and bake for 10-15 minutes
Tips:
1. Potatoes are half-ripe after blanching, so it won’t take too long to bake
2. When eating with tomato sauce, potatoes and tomato sauce are good friends
