In summer, children always have no appetite for rice, and always like to drink porridge, but when there is not enough porridge, all kinds of cakes have become the staple food of my family’s summer porridge. Potato cakes are simple to cook. They are crispy on the outside and tender on the inside. It can also be used as a snack for afternoon tea.

1. Cut potatoes into cubes and cook in water for 3-4 minutes until they are almost cooked
