Prepare the ingredients.

Wash the shepherd's purse, blanch and remove.

Pour oil in the soup pot and sauté the scallions and ginger.

Put the chopped shepherd's purse and stir fry.
5.
Add proper amount of boiling water, salt and pepper.

Boil for two minutes, then add the diced lactone tofu.
7.
After boiling, pour in water starch.
8.
Finally, pour in the egg mixture, add an appropriate amount of chicken essence and turn off the heat.
Tips:
The lactone tofu is easy to break, so don't stir it vigorously after putting it in the soup pot.
The shepherd's purse is blanched with a little salt to make it greener.
