Prawn Dumplings with Eggs
1.
The first step is to peel the shrimp. First take 10 heads, peel them, and open the back. Cut a vertical knife from the back of the shrimp. Don't cut it, cut it into a pipa shape. Pick out the shrimp thread by the way. Be sure to leave a section of the shrimp tail. This is the key to the final look. It is also convenient to pick up the shrimp tail and send it to your mouth when you eat.
2.
The second step is filling. The remaining 8 shrimps are directly peeled and minced and mixed with the minced meat. Add the chopped diced mushrooms and chopped green onion. The seasoning part is 1 tablespoon light soy sauce, 1 tablespoon cooking wine, 1 teaspoon salt, 1 teaspoon sugar , 1 tablespoon of sesame oil, beat evenly. You can add pepper noodles according to your taste
3.
The third step is to make shrimp dumplings. The method is simple, but the shape is very beautiful: take a dumpling wrapper, put a small amount of dumpling filling in the middle, and make it into an oval shape, and then put a shrimp with an open back on the filling. Dip the edge of the dumpling wrapper with water, and pinch the two sides of the dumpling wrapper tightly. You don't need to seal the two ends.
4.
The fourth step is to fry the shrimp dumplings. It is recommended to use a flat-bottomed non-stick pan, pour 2 tablespoons of oil into the pan, wait for the oil to heat up, put the prawn dumplings on medium heat and fry them slowly for about 1 minute. At this time, the shrimp dumplings will almost have a crispy bottom. Very tempting. Then pour about 100ml of water into the pot, immediately cover the pot and simmer on medium heat for 3-5 minutes. When the water dries, turn to low heat. The cooked shrimp dumplings are basically cooked at this stage.
5.
The fifth step holds the egg. Break up the two eggs and pour them into the pot evenly. Gently shake the body of the pot to make the egg liquid more evenly divided. Cover the pan and fry on low heat until the egg is completely set. Turn off the heat, sprinkle chopped green onion, and cook!
Tips:
Be careful not to fry the dumpling skin after the heat. You can replace the mushrooms with corn kernels according to your preference.
