Ingredients

Protein Souffle

1. Prepare a little dried cranberries and chopped walnuts for later use.

2. Add a few drops of lemon juice to the egg whites.

3. Use a whisk at high speed until the fisheye bubble state, add one-third of the sugar, and continue to beat.

4. When it reaches a rich foam state, add one-third of the sugar, and continue to beat at medium and high speed.

5. Beat until fine foam, add the remaining one-third of the sugar, and cornstarch, beat at low speed.

6. Just hit this upright small corner state.

7. Scrape the egg whites into the baking dish with a spatula, and preheat the oven at 150 degrees.

8. Smooth it with a spatula.

9. Sprinkle with chopped dried fruit.
