Purple Potato Wife Cake

Puff pastry production: first mix low flour and 30g butter.

Add appropriate amount of water to knead into a smooth, non-sticky dough, wrap it in plastic wrap and put it in the refrigerator for about 20 minutes.

In this space, let’s make the purple sweet potato filling. Cut the purple sweet potato into small pieces and steam it, put it in a non-stick pan, add some butter and sugar (forgot to shoot -.-), and stir-fry on a low heat.

Finally, add a little bit of adjusted cornstarch water and knead it into purple sweet potato balls~

Put the remaining butter in a fresh-keeping bag, roll out into a thin slice slightly smaller than the dough, and overlap it on the dough. (Forgot to take this step)

Now follow the method of folding the quilt and fold it as shown in the picture~ (the folding steps are also forgotten, forgive me), and refrigerate for 20 minutes.

Repeat afterwards and refrigerate for 15 minutes. After taking it out, roll it into a long strip.

Preheat the oven at 200 degrees, beat the egg yolks, and stir-fry the black sesame seeds over heat.

Then cut the dough into small pieces and press flat~ Now you can open the bag, remember to use the way of buns~

Brush with egg mixture, sprinkle with black sesame seeds, and bake for about 20 minutes (this is still subject to the heat of your own oven)~

Tips:
1. I saved some steps and didn’t take them. You still have to follow the text~
2. If the purple sweet potato filling is too dry, it is okay to add a little water, but not too much, otherwise it will be painful when it is wrapped.
3. The calories of baked snacks are still a bit high, so occasionally it is okay to eat them.
