Purple Sweet Potato Bread

The main bread ingredients are ready and weighed separately; the purple sweet potato is brushed clean and steamed in a steamer, peeled and crushed for later use. These two tasks can be carried out at the same time

All the main ingredients except butter are put into the bread machine

Put the bread bucket in the bread machine, select a dough mixing program, 10 minutes; after the dough is slightly smooth, add softened butter, and then a dough mixing program, this time set 20 minutes

After kneading the dough, the dough is already very smooth and elastic. The dough is slowly pulled out of the film, with a finger poke, the edge of the hole is smooth, and the kneading is over.

The dough is rounded, and the basic fermentation is carried out in the barrel. Select the fermentation program and set it for 1 hour. This time depends on the season or the temperature outside the barrel.

When the dough is twice the original size, dip your fingers in a little flour and poke a hole at the top of the dough without collapsing or shrinking. Fermentation is successful.

Take the dough out of the bucket, place it on the kneading mat, vent and knead it round, cover with plastic wrap and relax for 10 minutes, then roll out a rectangular dough piece of about 40 cm in length and 30 cm in width, about 6, 7 mm in thickness

Spread the steamed and peeled purple potato mash evenly on the noodles. The purple potato mash is very dry and there is no water. It can be easily crushed by hand. The amount can be used as much as you want.

Roll into a circle from top to bottom, not too loose or too tight, as long as each layer can fit tightly, with the seal facing down

Use a scraper to cut the dough roll into 14 uniform portions

Put a layer in the bread bucket first, with the cut side facing up, a total of five in the four corners and the middle

Place 4 on the second layer, and place them at the four seams around the first layer; the top layer is placed in the same position as the bottom layer, cover the bread machine, and select "fermentation" for one hour

The bread is twice as big and the surface is smooth and rounded

The toasted bread had a good color, although it was dark, it happened to be for breakfast the next day. Pour the bread from the bucket on the drying rack, put it in a bag and seal it after cooling, and slice it when eating

Tips:
The purple sweet potato is steamed and peeled, crushed into powder by hand or crushed into puree with a spoon. The amount of three small purple sweet potatoes I use; because it needs to be reshaped, you can choose separate procedures to complete.
