I love this bread. Originally it was due to a few very beautiful oranges. I always felt a pity to lose the orange peel, so I almost scraped off the orange peel and stained it with white sugar, then added yogurt to knead a dough and wrapped it in the beautiful purple sweet potato. Mud, and finally beautiful and delicious bread is born.

Purple Sweet Potato Orange Bread

1. Prepare the necessary materials, and put the purple potato mash in the refrigerator in advance

2. Yogurt + eggs + sugar and salt mix well

3. Add candied orange zest and mix (scrape off orange zest in advance, soak overnight with sugar)

4. Add bread flour and yeast powder

5. Stir it with chopsticks until there is no dry powder, cover it with plastic wrap, and keep it in the refrigerator for 1 hour

6. Take out the loose dough and knead until it has good ductility, then add softened butter

7. Continue to knead until the glove film comes out

8. After wrapping in plastic wrap, it starts to ferment to double the size

9. The made dough is vented and rounded in small portions to relax for ten minutes

10. Take a portion, roll it out, and put on the mashed purple sweet potato (the purple sweet potato is steamed while adding sugar and yogurt + lemon juice to mash it)

11. Rolled into bread dough

12. Finish all the bread dough in turn and arrange them into the baking tray

13. After the second fermentation to double the size, brush with egg liquid

14. Put it in the middle of the 180 degree oven for 15 minutes

Tips:

The dough absorbs the moisture by the freezer standing method, and the film is easier to get out, and it is easy to knead by hand.
The orange peel is made in advance, and the flavor is more refreshing after the release.
