Purple Yam Buns

Purple yam peeled and thinly sliced

Steam over water for a few minutes, then press into a puree with a spoon, and sieve once to make it more delicate

Yeast is dissolved in warm water

Pour the flour and sugar into the basin and mix, then add the purple yam puree, and pour in the yeast water

And into a smooth dough

If the room temperature is low, it can be fermented in the oven. Use the oven's fermentation stall, but the dough must be covered. The dough will be twice as large as the fermentation.

Take out the dough and knead it evenly, and knead it into a strip

Cut into 3CM long pieces, 17 pieces in total

Put in the steamer

Proof for 20 minutes. When the room temperature is low, heat the water in the steamer to a temperature that can be touched by your hands, and then put the steamer on it.

Steam in a pot on cold water, turn high heat to medium and low heat and steam for about 8 minutes, depending on the size of the steamed buns
