After washing the leek, soak it in salt water for 10 minutes.

Beat the eggs in a bowl and stir well, add a small amount of pepper, and stir again with a teaspoon of warm water.

After removing the water from the leek, clean it again and cut into 2-3 cm sections. Also cut the celery into 2-3 cm sections and the chives into small sections.

Tips:
1. Beat the eggs in a bowl and add some warm water to make the scrambled eggs softer. Scrambled eggs need a little more oil and high fire to produce soft eggs.

3. Since the chives were soaked in salt water first, I only put a little bit when adding salt at the end.
