Quinoa Straw Mushroom Soup

1. Wash vegetables, slice straw mushrooms, cut small tomatoes in half, and mince coriander.

2. Put the quinoa in a fine mesh strainer, rinse with water and set aside.

3. Put chicken broth, quinoa, and water in a stock pot and bring to a boil over high heat.

4. Add small tomatoes and straw mushrooms, turn to a simmer after boiling.

5. Cook for about 15 minutes, add coriander and turn off the heat.

6. Finally, add salt and pepper to taste.
