Use purple amaranth leaves with water to boil, and strain the juice (the boiled purple amaranth leaves can be eaten cold and not wasted)

Knead the noodles by hand and knead for a longer time. The buns made in this way are more tough and chewy, fermented to 1.5 times their size at room temperature, take them out and knead them to let out the air, and then knead them repeatedly for 7 or 8 minutes. (I am Manually knead, if you have a bread machine at home, I suggest you put all the ingredients in the bread machine and knead for 40 minutes). Knead it into a smooth dough and leave it in a warm place to ferment;

Take out the dough when it is twice as large as it is fermented; re-exhaust, round and relax for 5 minutes;

The loosened dough is stretched, kneaded into a smooth cylindrical shape, and divided into small doughs.

Roll out the dough into 0.5cm thick slices, each with a diameter of 8 to 10cm in a circle

Roll the dough into a dough, stack the 6 dough together, and align the center line. ---Lay the 6 dough sheets as shown in the figure

Spread a layer of oil on the steamer, put the small Hanamaki greens in a pot with cold water, and steam for about 18 minutes on high heat. After turning off the heat, use the residual heat to simmer for about 3 minutes before uncovering the pot. (Use white paper to stick to the bottom of the steamed bun to prevent it from sticking to the bottom. This will save trouble. Just tear off the white paper when eating).

Tips:
Regarding the color: you can use purple to mix the noodles, which is purple rose. Pumpkin puree and noodles are yellow roses. As for the water and noodles of amaranth,
The final product is not very red. I will try yellow roses and purple roses next time I have a chance.
The size of the small noodles determines the size of the final rose, which can be determined by personal preference; what I made is so big, I think it can be made smaller.
The more layers of the dough, the more layers of roses will be made, but not too much, otherwise it will not be easy to shape; apply a layer of oil to the steamer to prevent the rolls from sticking to the pot. You can also use a steamer cloth instead.

The fun of playing this steamed bun is: her color is constantly changing, what color it will become, I don’t know.
There are surprises at any time, but next time I will not use purple amaranth juice as natural coloring, because next time I try to add purple potato puree or pumpkin puree.
I originally wanted to make yellow roses, but I asked for pumpkins, which was too much trouble, so I just finished it. Using amaranth as a natural pigment, the result was a very light rose.
When I was with the noodles, it was light pink, and after steaming, it was a lighter pink rose, haha~
