Rainbow Rice Cake

A collection of ingredients: 1 bag of rice noodles, half a red dragon fruit, 1 carrot, 1/4 pumpkin, 4 spinach, and 1/4 lemon.

Wash the pumpkin, slice it, and microwave it for 5 minutes.

A bowl of pumpkin + a bowl of water, stir into a puree by the cooking machine.

Strain the pumpkin puree to leave the juice.

Add the same amount of water to the carrots and squeeze the juice.

Add a few drops of lemon juice to the squeezed juice to prevent oxidation.

Spinach + a bowl of water, squeeze the juice, add a few drops of lemon juice.

Cut the red dragon fruit in half and dig out the flesh.

Half a pulp + a bowl of water, crush it carefully with a spoon.

Strain the dragon juice and add a few drops of lemon juice.

There are five colors in total. The white one can be water, milk, coconut milk, etc.

Add an equal amount of rice flour, a spoonful of sugar, and a half-spoonful of salt for each color, and mix smoothly without particles.

The steamer is heated and the inside of the mold is greased.

Pour an appropriate amount of white rice paste first.

After boiling the steamer, put it into the mold, and cover the bottom with a piece of baking paper to prevent the water from falling.

On high fire, the rice paste will solidify after 5 minutes, tap once to confirm whether it is cooked. When cooked, pour the second layer of red rice paste.

After 5 minutes, the second layer is steamed, and the third layer of carrot rice paste is poured.

After 10 minutes, observe whether it is cooked. When it is cooked, pour the fourth layer of pumpkin rice paste.

After 15 minutes, pour the fifth layer of spinach rice paste and steam for 15 minutes on high heat until it is cooked through. Grease the flat bottom plate, pour out the rice cakes, sprinkle with black sesame seeds, and change the knife.

You can see that the rice cakes are layered very clearly and the colors are distinct. If it’s still a bit soft when tapped, it’s okay, it will harden after letting it cool.

Serve on a plate with various fruits, topped with a small amount of sweet-scented osmanthus.

Tips:
1. Rice noodles are sold in supermarkets. The ratio of rice noodles to vegetable juices is 1:1. Stir until there is texture.
2. Dragon fruit, carrots, pumpkin, coconut milk, etc. all have sweetness, so put less sugar.
3. Every layer of rice paste should be thin, I made it too thick. If the mold is deep enough, you can do another round to make a nine-layer cake.
4. Pour out the rice cake while it is hot, dry it and cut into pieces, let cool and eat.
5. It can be topped with honey, sweet-scented osmanthus, or dipped in spicy sauce.
