Red Bean Plum Pork Dumpling

Wash the pork plum meat, control the water, add light soy sauce, dark soy sauce, salt, sugar, and pepper, repeatedly scratch and knead, then put it in the refrigerator to marinate overnight, and marinate it for 24 hours.

Soak the glutinous rice and red beans in advance for more than 4 hours. I have soaked them overnight. Mix the soaked glutinous rice and red beans well and control the moisture.

Add light soy sauce, dark soy sauce, salt and mix well.

Soak the zong leaves overnight in advance, and cut off both ends.

Fold into a funnel shape.

Add about 1/3 of the red beans and glutinous rice.

Put a piece of marinated plum meat.

Then add an appropriate amount of red beans and glutinous rice.

As shown in the picture, the zongye on the left is folded toward the middle.

Fold the one on the right to the center.

Fold down the zong leaves above, press the zong leaves that have just been folded on the left and right sides, and then tie them tightly.

Put the rice dumplings in a pressure cooker, add water and press for 30 minutes. After the pressure is released naturally, leave the lid on and simmer for a few more hours.

The glutinous rice is fragrant with soft glutinous meat and it is delicious.
