Snow dumplings are traditional tea food treasures, "white as snow, shaped like dumplings". They have a crisp taste, moderate sweetness, non-sticky, and unique flavor. They are one of the traditional famous pastries in Jiangnan.

Red Bean Snow Dumplings

1. The oily skin materials are mixed evenly and knead smoothly (it is more convenient when you roll it underneath), and the pastry materials are wiped thoroughly (rub for a while, rub with the palm and heel)

2. Cover the crust and shortbread with plastic wrap and wake up for a while, then divide the crust and shortbread into seven portions

3. Wrap the oil skin into the shortbread and roll it out

4. Roll up and wake up at 90 degrees for 10 minutes (wake up is to make it easier to roll the small dose)

5. Then flatten the small dose and roll it out

6. Roll up, roll out into a circle after waking up for 10 minutes, wrap in honey red beans

7. Press into a half moon shape and fold the edges into lace

8. Fold it and set it aside for later use. Fry it until cooked at about 120 degrees in the oil pan (the oil temperature must not be too high, it will fry golden brown if it is high). Just stick the powdered sugar on the surface, if you think the powdered sugar is too sweet, you can use it 1:1 mixture of cooked dry flour and powdered sugar and sprinkle on the snow dumplings
