Red Date and Tremella Soup

Cut the white fungus into small pieces and remove the root.

Add water and soak overnight.
3.
Soak until hair is not bad.
4.
Sieve and wash, drain and set aside.

The big red dates are pitted and cut into small pieces (if small red dates are used, this step can be omitted).

Add water to the diced red dates in the soup pot and bring to a boil.
7.
Add the soaked white fungus and cook for 40 minutes.
8.
Add old rock sugar before turning off the heat.
