Red Dates, Lotus Seed and Tremella Soup

Prepare all kinds of raw materials.

Tremella, soak in water for about 3 hours.

Soak lotus seeds and red dates in water for 30 minutes.

Soak the white fungus, cut off the yellow parts, and then tear them into small flowers. (The more crushed the better, the faster it cooks, the gelatinous texture is easy to come out, and it’s soft and waxy)

Take a straw and core out the soaked red dates. (Red date pits are hot, try to remove them when cooking the soup)

Wash the pitted red dates and soaked lotus seeds for later use.

Pour shredded white fungus, lotus seeds and red dates into the inner pot of the electric pressure cooker, and add filtered water. The amount of water is not fixed. If you want to drink a little thicker, add less water, otherwise add more water.

Put it into the electric pressure cooker, select the program, and start to simmer. It takes about 1 hour. After opening the lid, add the old rock sugar, stir and melt. In a pressure cooker, it takes time to quickly boil until soft and glutinous, which is a very good choice.
Tips:
1: Because red dates have a sweet taste, you don't want to put them in old rock candy if you don't want them to be too sweet.
2: If the amount of stewed dessert is relatively large, you can scoop out a portion and refrigerate it first, but it is best to finish it within two days.
