Red Oil Lotus Root

Put the chili noodles in a bowl and put an appropriate amount of sesame seeds.

Heat the oil in the pot, turn off the heat and wait for about 15 seconds, then pour the oil into the chili noodles. (The oil must be cooked, but you can't pour the chili noodles right away, otherwise it will be mushy)

The peanuts are crushed into peanuts.

Peel and wash lotus root.

Cut the lotus root into about 2 mm pieces, soak it in clean water to remove the starch in the lotus root.

Boil water in a pot, add lotus root slices and blanch until cooked.
7.
Soak the blanched lotus root in cold boiled water.
8.
Add salt, sugar, vinegar, chicken essence, ground peanuts and appropriate amount of chili oil and mix well.
Tips:
It is said that the red-oiled lotus root in traditional Hunan cuisine needs to be minced with garlic. I personally like the crispy and sweet taste of the lotus root. I don't add ginger and garlic. You can make up if you like it.
