How can there be a bowl of braised pork on the table when the new year comes. Today, I will make a different braised pork: braised pork with papaya, fat but not greasy, with salty flavour.

1. Cut the pork belly into large pieces of about 3 cm, and blanch in a pot under cold water. This step can remove the fishy

2. If you don’t need a single head garlic, just use three ordinary garlic cloves

3. Put the sugar in the hot pan with cold oil, and fry the sugar until it is brown. When there is a little bubbling, add the pork belly and stir-fry quickly evenly.

4. Cook the cooking wine and stir continuously until the oil is out.

5. Then add green onion, ginger, garlic, pepper, continue to stir fry and smell the aroma, then add water to froth the pork belly.

6. Add one spoon of dark soy sauce and two spoons of light soy sauce.

7. Add the star anise to a boil over high heat and simmer for an hour.

8. Cut papaya into pieces for later use

9. One hour later, add papaya and appropriate amount of salt to harvest the juice. It is best to collect the soup cleanly.

Tips:

If you don't add papaya, you can just clean the soup over a high fire.
