Refreshing Cold Noodles with Sesame Sauce

500 grams of wet noodles (for two)

Put water in the pot and boil, add the noodles, boil, add a small bowl of cold water and boil again and remove. Add 2 tablespoons of sesame oil to the noodles in cold water 2-3 times to prevent sticking. Add ice cubes to mix for a while and set aside.

Shred cucumber, shred carrots, and remove roots of bean sprouts. Blanch the carrots and bean sprouts and remove them from cold water for later use.

Adjust the sauce. Mash the garlic into minced garlic, add 2 tablespoons of light soy sauce, 2 tablespoons of salt, 2 tablespoons of vinegar, 2 tablespoons of sesame oil, 1 tablespoon of sugar, 2 tablespoons of Laoganma, and 2 tablespoons of sesame paste to make a sauce.

Pour the bean sprouts, cucumber, carrot and sauce into the noodles and mix well.

Note: 1. Do not cook the noodles for too long, otherwise it will affect the taste. 2. After the noodles are cooked, ice cubes must be added at the end. If there are no ice cubes, ice water will do. This is the key to a cool and refreshing taste. 3. Both sesame paste and sugar cannot be omitted. The taste of sesame paste with and without sesame paste will be much worse. Sugar can play a role in improving freshness.
