Refreshing Dish: Cold Simmered Ear Root

The old roots are removed from the roots and the beards are also pinched, leaving tender white roots and leaves. The roots I bought do not have leaves, and the beards are not completely removed. I see that the neighbors do not chop the beards. It depends on your preference. Wash it several times with clean water to remove the sediment, soak in cold water for 10 minutes, remove the dry water and set aside;

Stir in the washed roots of the ears, stir in salt, grasp well with your hands, marinate for a while, then pour out the marinated water;

Prepare homemade garlic tempeh hot sauce, homemade sauce has no additives, preservatives...absolutely healthy food, and the flavor of mixed vegetables and noodles is superb. If you don’t have garlic tempeh sauce, use Lao Gan Ma instead;

Add appropriate amount of chopped ginger in the garlic tempeh hot sauce;

Put the appropriate amount of sugar, light soy sauce, balsamic vinegar, sesame oil, pepper oil, salt, chicken essence, and white sesame seeds into the garlic tempeh hot sauce. The seasoning can be increased or decreased according to personal taste;

Pour the seasoning mixed in step 5 on the root of the ears, and mix well when eating.
Tips:
1. Be sure to wash the roots with clean water several times and soak them in cold water for a while; blanching is not recommended;
2. Garlic and tempeh hot sauce can be replaced by Lao Ganma, or other spicy sauces, cooked oily chili sauce can also be used;
3. With garlic and tempeh hot sauce, there is no need to add red oil;
4. If there is no pepper oil, you can pour an appropriate amount of vegetable oil into the wok to heat, put the pepper in the pot, fry the pepper on a low heat, then discard the pepper, the remaining oil is the pepper oil.
