Refreshing Fungus

The first step: prepare the ingredients. Black fungus, red pepper, garlic, ginger, etc.

Step 2: Wash the black fungus several times with clean water, and then soak it in clean water for another 2 hours to clean the roots and impurities of the black fungus.

The third step: While soaking the black fungus, chop the red pepper, chop the ginger, add vinegar, sugar, salt, and sesame oil to fully evaporate the spicy flavor of the pepper into the vinegar sauce.

Tips:
It should be noted that the black fungus can improve the solubility of dietary fiber and polysaccharides of black fungus after being cooked at high temperature, which is helpful for absorption and utilization. Therefore, the black fungus must be boiled and eaten in a boiling water pot, not directly soaked and eaten.
