Refreshing Mixed Vegetables

Cut off the roots of the enoki mushrooms, peel the carrots, and remove the old tendons of snow peas and wash them.

Cut carrots and snow peas into thin strips.

Boil the water in a small pot, add enoki mushrooms, carrots, and snow peas to blanch until cooked.

Remove the blanched vegetables and soak them in cold water for ten minutes.
