Ribs Stew

Wash the ribs with clean water.

Boil water in a pot under cold water.

Prepare seasonings when blanching water: a can of dark beer (this dark beer is not high, only 8 degrees, so you can put it in), vinegar, light soy sauce, dark soy sauce.

Pepper, aniseed, dried chili, rock sugar, green onions, ginger, garlic.

I took a "hot bath" of the ribs and took out the water and rinsed them out.

Stir-fry the ribs in a pot first, and put in various prepared seasonings. (I used a dry grinder to powder the aniseed and peppercorns, because it is easier for children to eat)

After the ribs are fried and colored, add a can of dark beer. (Don’t worry, the ribs will be simmered for more than an hour. The alcohol is already shining. There is only the aroma of beer. It is absolutely no problem for children to eat it)

When the beer is added, there is no need to add water. After the pot is boiled, let it simmer for an hour and a half. (If time permits, you can cook slowly over a low heat, if you are in a hurry, use a pressure cooker for 10 minutes.)

During the process of braising the ribs, prepare the side dishes: cut the garlic sprouts into pieces.

Soak the vermicelli in warm water. (This was brought by my mother’s relatives in his hometown. The pure northern Shaanxi potato noodles, I usually don’t want to eat it)

Cut tofu and cabbage into pieces.

Cut potatoes into pieces.

When the time is up, the soup for the ribs is almost ready. Add potatoes, tofu, and cabbage. Don't be afraid to paste the pot, because the cabbage will make soup soon. Now start adding salt. If you add salt in advance, the ribs will not be simmered.

When the dishes are almost cooked, put the vermicelli in for a while.

Add garlic sprouts when they are out of the pot and turn off the heat.

Tips:
1. The addition of beer to the ribs will make the meat more fragrant, and can also play a role in removing fishy. After a long time of stewing, the alcohol has all evaporated, so the child will have no problem eating it.
2. Don't put the vermicelli too early, it will stick to the pot.
3. Don't put salt when stewing ribs, the meat will not be simmered. After the ribs are stewed, put the salt on the side dishes.
