Roast Beef with Small Potatoes, Braised Sirloin in Brown Sauce, Delicious to Lick
1.
Cut the sirloin into pieces, soak in cold water for more than half an hour, change the water several times in the middle, and wash the blood out until the sirloin is white. No need to blanch. After soaking, wipe the water dry with kitchen paper.
2.
Wash and peel the small potatoes.
3.
Cut small potatoes in half. Three or four scallions, 4~5 garlic cloves, cut in half. 1 small piece of grass fruit, 2 pieces of ginger, 1 piece of cinnamon, 3 pieces of bay leaves, 1 piece of star anise, 4-5 dried chilies, and a small handful of pepper (about 40 pieces).
4.
Put some oil in the pan, the oil is 50% hot, put the sesame pepper in it and fry the flavor and throw it away. Be careful not to fry it.
5.
Stir-fry the beef and add a little white wine to get rid of the fishy.
6.
Add the newly prepared seasonings and stir fry over high heat to create a fragrant flavor.
7.
Put 2 tablespoons of dark soy sauce, 1 tablespoon of light soy sauce, 1 tablespoon of fuel consumption, four or five pieces of rock sugar, turn to medium and low heat and continue to stir fry. My spoon is a soup spoon of Western food, which is a bit bigger than a porcelain soup spoon.
8.
Put 4-5 pieces of white rock candy, the yellow rock candy I used, put so many, you can refer to it.
9.
After frying for a while (about five minutes), pick out all the spices and throw them away. Otherwise, the seasoning is too strong, I can't accept it anyway.
10.
Put the fried beef into an electric pressure cooker, the beef is covered with water, and the maximum pressure is 35 minutes. (I used a casserole to simmer for almost 2 hours before it didn’t go bad, so it’s best to use a pressure cooker if you have a pressure cooker.)
11.
After simmering, transfer from the pressure cooker to a non-stick pan, add the potatoes, and simmer for 15 minutes. (Cover the lid)
12.
After 15 minutes, open the lid and heat to collect the juice. (You can taste this step and adjust the saltiness and sweetness according to your own taste.) Don't collect all the juices, leave some bibimbap super fragrant. (It’s not clear why the video is uploaded!)
