Roast Pork with Winter Bamboo Shoots

1. Prepare winter bamboo shoots.

2. Soak winter bamboo shoots in clean water for 10 minutes and rinse them off.

3. Cut winter bamboo shoots into small pieces.

4. Put winter bamboo shoots in water and blanch them in boiling water for 3-5 minutes.

5. Cut the pork into small pieces.

6. Pork in a pot under cold water, boil for 3 minutes after boiling, skim off the scum, rinse, remove and set aside.

7. Pour an appropriate amount of cooking oil into the pot.
Add rock sugar, stir-fry on low heat until the sugar turns brown and creates small bubbles.

8. Add pork and stir fry quickly.

9. Add scallion ginger, aniseed, bay leaves, cinnamon and other seasonings and continue to stir fry.

10. Add winter bamboo shoots.

11. Add some salt to taste.

12. Add the right amount of water to the pork.

13. Bring to a boil over high heat, simmer for 40 minutes on low heat, when the pork is soft and rotten, collect the juice on high heat.
