Roasted Purple Cabbage with Hericium

Hericium edodes soaked in cold water

Sliced hericium edodes after soaking

Put the Hericium erinaceus in a boiling pot and cook for 5 minutes, then remove and drain the water

Wash the purple cabbage

From the frying pan, stir the scallion and ginger into the pan

Stir-fry hericium edodes

Stir-fry with soy sauce

Add rock sugar and fry evenly, add proper amount of water and cover the pot to burn

Purple cabbage torn into small pieces

Fry the hericium mushrooms for 10 minutes, then stir-fry the purple cabbage

Add salt and fry evenly, turn off the heat, serve and enjoy
Tips:
1. When soaking the Hericium erinaceus, change the water timely to remove the bitter taste of the Hericium erinaceus.
2. Condiments are added according to personal taste.
3. The purple cabbage should not be fried for too long after being put into the pot.
