Roasted Purple Cabbage with Hericium

Soak the Hericium erinaceus in cold water.

Slice the soaked Hericium erinaceus.
3.
Put the Hericium erinaceus in a boiling pot and cook for 5 minutes, then remove and drain.

Wash the purple cabbage.
5.
From the frying pan, stir the scallion and ginger into the pot and stir fragrant.
6.
Stir-fry the Hericium edodes.
7.
Stir fry with soy sauce.
8.
Add rock sugar and stir-fry evenly, add appropriate amount of water, cover the pot and cook.
9.
Tear the purple cabbage into small pieces.
10.
After cooking the hericium mushroom for 10 minutes, stir-fry the purple cabbage in the pot.
11.
Stir-fry with salt.
12.
Stir-fry evenly, turn off the heat, serve and enjoy.
Tips:
1. When soaking the Hericium erinaceus, change the water timely to remove the bitter taste of the Hericium erinaceus.
2. Condiments are added according to personal taste.
3. The purple cabbage should not be fried for too long after being put into the pot.
