Roasted Trotters

Wash the pig's trotters that you bought, and then put an appropriate amount of water in the pot, put the trotters into the pot, put the green onion and ginger slices into the pot and bring to a boil to remove the blood foam and the smell of pigs.

Take out the blanched pig's feet, rinse with clean water, and then clean the pig's hair.

Pour fresh water into the pot again, add the cleaned pig’s feet, add pepper, aniseed, cinnamon, ginger, cooking wine, dark soy sauce, salt and sugar and simmer on high heat, then turn to low heat and simmer for about 2 hours. You can use chopsticks to prick the trotters until the stew is cooked through. It is easy to pierce through, that is, it is fully cooked.

Tips:
1. The raw pig's trotter must be blanched in water to remove the smell. When blanching, you can boil it for a while, about 5 minutes, and boil the pig blood in the pig's trotter to remove the smell of pigs.
