Rock Sugar Trotters

Soak the trotters in clean water for 4 hours, then wash and remove

Prepare all seasonings (cooking wine, light soy sauce, dark soy sauce, shallots, rock sugar, ginger, star anise and dried chili)

Boil the trotters in a pot under cold water first, then remove them and wash them.

In another pot, add the bottom oil, add the green onion and ginger, and sauté the star anise

Add the pig's trotters and stir-fry to taste and then pour in the rice wine

Add light soy sauce and dark soy sauce and stir fry until they are all colored. Add dried chilies

Add rock sugar

Pour all into the electric pressure cooker

Press for 25 minutes

After the exhaust can be opened, adjust for a few minutes without closing the lid to collect the juice and turn off the heat

Serve
Tips:
1. Each restaurant has different tastes, we added soy sauce and no salt, and adjusted according to our own taste
2. If you don't like sweetness, you can reduce the amount of rock sugar
3. Pressing with a pressure cooker will not lose water, do not add too much cooking wine or water, if you use an open flame, increase the amount of water
