Rock Sugar Trotters

Prepare the ingredients you need, chop the trotters into two small sections, clean the pig hair, and wash it for later use.

Put cold water that has not had the trotters in the pot, and add two spoons of white wine.

After the trotters are boiled, leave the lid on and cook for another 2 minutes to remove the blood and foam.

Heat the oil pan, add 1 spoon of cooking oil, add an appropriate amount of rock sugar, wait until the rock sugar melts and turn yellow, add star anise and bay leaves.

Then add green onion and ginger slices and fry until fragrant, add pork knuckles and stir fry.

Put 4 tablespoons of braised sauce and 2 tablespoons of light soy sauce into the pot, then add boiling water that has not had the trotters, and boil. Pour the pig's trotters into the pressure cooker, select the tendon stalls, and press them until cooked.

Pour the pressed pig's trotter back into the pot without too much soup, just 1/3 of the amount of the trotter. Because the pig's trotter is already cooked, it will not taste good if it is too rotten. This step is to collect the juice of the pig's trotter and have a bright red color.
