Salted Duck
1.
Put the spices in the pot first
2.
Add half of the salt, turn on the heat, and fry until the salt is slightly yellow
3.
Wait a little bit to cool down, pour it on the cleaned duck, spread the whole duck with your hands, massage it for a few minutes, then put it in the refrigerator to marinate, I marinated it for one night plus half a day
4.
Wash the marinated duck, put the washed spices in the bag, or take the spice bag again, and put the duck, the bag, green onion, and ginger in the pot.
5.
Add the remaining salt
6.
Add water to the duck, boil, add cooking wine, continue to cook, about 20 minutes, take the chopsticks in the legs and can be inserted to the end, it is almost fine, turn off the heat and simmer, soak in the soup for four or five hours.
7.
When it’s time to eat, take it out of the soup and let the water dry.
