Salted Duck Gizzards

You don’t need to wash the duck gizzards. You can pickle them with cooking wine, green onion and ginger and freeze them in the refrigerator. Take them out to thaw and wash them when you eat them.

Put the duck gizzards into the pot, add cold water to submerge the duck gizzards, add green onion, star anise, cinnamon, bay leaves, pepper and ginger in turn, boil over high heat

After the water is boiled, add appropriate amount of cooking wine and two tablespoons of salt, continue to simmer for 30-40 minutes

Remove and let cool, cut into thin slices, and drizzle with a little sesame oil.
