Sauce Fried Squid

Steps: Soak the squid in vinegar-added water for 10 minutes, then tear off the film from the squid body, then wash, and cut into sections;
Heat water in a pot, add ginger slices, pour the squid to blanch water, turn off the heat when the squid is slightly rolled;
Pick up and drain the water;
Cut the ginger, garlic and chili;

Add a proper amount of oil to the pot and heat it up, then add the ground ginger;
Add minced garlic and chili and stir fry until fragrant;
Pour into the squid and stir fry;
Add 1 tablespoon of Pixian bean paste;

After stir-frying evenly, add rice wine into it and continue to stir-fry;
Add to the oyster sauce;
Finally, add some sugar and vinegar to enhance the flavor;
Stir-fry evenly, turn off the heat and get out of the pot
Tips:
1. Marine fish are fishy, ginger garlic, pepper, rice wine, these can remove fishy and increase fragrance, you can put a little more in moderate amount;
2. Soak the squid in water with vinegar, it will be easier to tear off the upper film!
