Sauce Skeleton

Wash the spine and set aside

Put the spine into the pot, add cold water, boil over high heat, skim off the scum, cook for about 3 minutes, remove the spine and rinse the surface with clean water repeatedly

Bring the old marinade to a boil, add appropriate amount of boiling water, ginger slices, pepper, cumin, star anise, grass fruit, cinnamon and bay leaves, mix in cooking wine, light soy sauce, dark soy sauce, white sugar

Put the boiled marinade and back bone into the pressure cooker and simmer for 30 minutes.

Tips:
1. There is no old marinade, just add water directly, add aniseed and seasonings
2. After making the marinade cool, you can put it in the refrigerator and put it in the next time you make it
