Sauce Trotters
1.
5 grams each of sliced ginger and green onion

Soak 500 grams of trotters in 500ML water for 3 hours

5ML edible oil, 1 star anise, 1 piece of cinnamon, 20 grams of rock sugar, stir-fry the sugar color on a low fire, pour in the trotters, and fry on a low fire until the trotters are colored

Pour in shallots, ginger slices, cooking wine and soy sauce, 20 grams each of sweet noodle sauce, stir-fry evenly
5.
Pour 250ML of water, stir well, boil on high heat and turn to low heat and simmer for 1 hour
