Scallion Chicken Drumsticks

Wash the drumsticks!

Use toothpicks or needles to pierce some small holes, which is convenient for the taste (saying that when I pierce, I always think of Rongma, hehe)

Put green onion and ginger to marinate in salt cooking wine! I usually marinate for three hours!

Marinated chicken drumsticks!

Wash the marinated chicken drumsticks and discard the green onion and ginger when marinating the chicken drumsticks! Boil water in a pot, add the marinated chicken legs, re-add the scallion and ginger slices. After the water is boiled, cook on a low heat for 10 minutes. Just use chopsticks to easily pierce it through! Stamp stuffy for 10 minutes!

Take out the stewed chicken drumsticks and quickly put them in ice water! (Put cold boiled water in the refrigerator in advance and put the chicken drumsticks in ice water to make the chicken skin stronger and more delicious. This is how the white chicken is done.) Don't omit this step!

After soaking in ice water for 5-10 minutes, chop the chicken legs into small pieces and place them on the plate!

Add a teaspoon of light soy sauce and a teaspoon of steamed fish soy sauce (the spoon we usually use for meals)

Put the white onion in the pan and fry until golden, don't remove it!

Put garlic cubes in the fried shallot oil, don't fry them out! (Scallion and garlic can be put together, I separate them) Then pour the scallion oil on the chicken thighs and sprinkle the scallions to decorate it!
Tips:
1: Chicken drumsticks are easy to cook, don't cook for too long!
2: The cooked chicken legs are simmered for a while and quickly placed in ice water. This step is very important!
3: I added light soy sauce and steamed fish soy sauce. You can also replace it with soy sauce. The color will be darker!
4: Deep-fried shallot oil is best fried with scallions until golden brown!
