Scallion Noodles

Prepare materials

Wash the shallots and cut into sections with a knife, leaving only the leaves of the shallots for later use;
Light soy sauce, dark soy sauce and sugar are mixed evenly

After the water boils, cook the noodles (I used the hand-rolled noodles sold on the street, you can choose the noodles to be more authentic)

Cool the cooked noodles

Pour 6 tablespoons of corn oil (90 ml) in a pot, heat to 50% heat, add green onion leaves and turn to low heat

Remember to use a small fire to slowly fry the green onion leaves until they are browned. You can add a little white sesame to make you more appetite

Pour in the soy sauce, dark soy sauce, and sugar mixture, cook until bubbling and turn off the heat, and the noodle sauce is ready!

Remove the noodles and put them in a bowl. Spoon two spoons of scallion sauce to cover the noodles

When you eat, just mix it up and it's OK!
Tips:
1. Please select the green onion leaf part of chives for making;
2. Choose dried noodles for noodles, the taste will be more authentic!
