Scallion Noodles

First prepare the ingredients you need: small chives only use green onion leaves, I use raw peanuts, which will be fried later, or you can use cooked ones directly.

Finally, add garlic slices and boil the scallion oil in the pot over medium heat. Turn off the heat for about 5 minutes.

Pour the prepared scallion oil on the cooked noodles while it is hot, mix well, then place the cucumber shreds and sprinkle with peanuts. You can also crush the peanuts into crushed peanuts. A bowl of fragrant scallion oil noodles is ready. .
Tips:
1. I feel that the scallion oil made with shallots will be more fragrant than shallots. You can make it according to your personal taste. 2. As for the choice of oil, try to use corn oil or sunflower oil with no special smell, if the taste is too big, it will cover the taste of scallion oil. 3. When frying peanuts, it must be in a cold oil pan, so that the fried peanuts will be crispy enough. 4. If you like spicy food, you can also add some chili oil to taste even better.
