Scallion Noodles

Wash the chives, beat them into knots, and dry them in water.

Bring water to a boil in a pot, add fine noodles, cook for five minutes, pick up and set aside.

Boil the pot to dry, pour in the cooking oil, wait until the oil is slightly hot, add the onion knots, turn off the heat and fry slowly.

Just fry it to this color, and discard the onion knots.

Sprinkle chopped green onion on the noodles, add a small spoonful of balsamic vinegar, a large spoonful of light soy sauce, top with hot spring onion oil, and start eating!
Tips:
1. The balsamic vinegar is only for enhancing the fragrance. Those who don't like the sour taste can add a little less.
2. Be sure to keep the scallion hot while pouring the noodles! It must be hot! It must be hot!
