1. Let’s hang up the broth first, we can also drink the delicious broth without using bones: beat 1 egg, pour it in hot oil, and spread it out

2. Pour in boiling water and boil for 10 minutes (a little more water)

3. Take out the broken eggs, look at the soup, it’s full of egg scent

4. Slightly chop the eggs (let's not waste it, add the eggs to the filling)

5. Pick and wash the shepherd's purse, blanch it in boiling water, and let it cool.

6. Squeeze the water a little and chop into fine pieces

7. Rinse the shrimp with baking soda and rinse with water

8. Crush with the back of a knife

9. Add light soy sauce, salt, five-spice powder, white pepper, chopped green onions, and minced ginger to the meat and stir well

10. Add shrimp, egg, scallion oil and stir well

11. Add the shepherd’s purse (mix the shepherd’s purse with sesame oil) and stir well.

12. Take a piece of wonton wrapper and put a little stuffing in the middle

13. Fold in half diagonally as shown in the picture (you can apply a little water around the wonton wrapper to make it more firm)

16. Add the wontons and cook until ripe

17. Add broth and salt to the bowl to taste (you can also add light soy sauce, balsamic vinegar)

Tips:

1: The shrimp can be chilled or fresh shrimp. No matter what kind of shrimp it is, there will be some fishy smell. Let me teach you a little trick. Use baking soda to rub it, so that it can greatly reduce the fishy smell. Moreover, the shrimps treated in this way, whether they are fried or stuffed, will be crispy, tender and translucent.
2: The shepherd's purse has no oil content. Mix it with sesame oil to moisturize it. Don't squeeze the shepherd's purse too dry to avoid firewood.
3: If the wonton filling is dry, you can add some water or stock to adjust it. If the filling is too dry, the wonton will be hard and not tasty.
