Scallion Potato Cakes

Use a grating to shave the potatoes at the coarse holes, place them on the vegetable hedge, wash away the starch from the potatoes with cold water, then grab the dry water with your hands, pour in salt, pepper noodles, sugar, dried onions (fresh onions are also acceptable) and Corn starch, mix well;

Coat the inner ring of the mold with a layer of oil, raise the pot, add a proper amount of oil, put the metal mold, fill in the material, smooth as much as possible, and turn on a medium-to-small fire;

Wait for the bottom to solidify and fry until light golden brown before demoulding. Change to medium heat and repeat on both sides until golden brown.
Tips:
1. If there is no dried onion, you can use crispy onion or fresh onion, cut into pieces and add to the batter and stir evenly;
2. It is completely okay not to use a mold. The size of the cake is determined by the operator, but the size should not be too large.
